Valle Pradinhos Red Reserva 2007

Região: Macedo de Cavaleiros, Trás-os-Montes, Portugal

Solo: Schist origin with medium levels of clay (argil) and the presence of quartz

Clima: Temperate, characteristically continental climate

Vinificação: Rigorous grape selection, total destemming followed by pre-fermentative maceration. Fermentation with manual daily pumping over with moderate temperature control. The wine was submitted to a long post fermentative maceration. This wine was aged in oak barrels for 20 months and was neither filtered nor cold-stabilized. It may throw a deposit.

Castas: Cabernet Sauvignon (90%), Tinta Amarela (10%).

Cor: Very intense red colour with a violet hue.

Aroma: Vigorous nose, very intense and complex with ripe black and red wild fruits, very ripe stone-fruit and notes of coffee and black chocolate. Spice notes such as vanilla, thyme and black pepper add elegance to the whole.

Paladar: Very full bodied with balanced acidity makes for an elegant wine. Soft smooth tannins well integrated by fruit. Long, persistent, ample and intensely rich finish.

Consumo: Should be served at a temperature between 16 ºC a 18 ºC. This wine is a very good match for red meats and mature cheeses. We recommend the wine be decanted before serving.
